Yes there are lots of frankly, bloody awful quality, shaky videos of Thai street vendors selling Kwaytiaw which are marginally interesting to the traveller who may be contemplating a visit. But no one has ever attempted to show you how to replicate this wonderfully versatile dish at home using ordinary kitchen equipment.
Granted we’re calling on the resources of four of our other, previous video tutorials in addition to this one, to pull it all together, but our regulars will be familiar with the methods and practices as there is no magic involved; simply the chefs insider information we share with our members in every video tutorial

Thai Noodles Recipe
(Kuaytiaw)
How to Make Thai Noodles
Ingredients:
lean pork steak
pork bones
pickled garlic
coriander roots
salt
palm sugar
seasoning sauce
galangal
cicken stock
5 ltrs water
Noodles Ingredients:
choice of noodles
egg noodle square wrappers
water spinach
bean sprouts
spring onions
coriander
pickled cabbage
fried garlic
pepper
Getting ready
skin the galangal
chop the scallions and cilantro
slice water spinach
place bean sprouts and water spinach in cold water
The cooking bit:
boil all the “stock ingredients” at the same time and cook for thirty minutes.
deep fry the egg noodle squares (medium heat) until crispy
after 30 minutes; remove the pork and slice
start serving up Kwaytiaw!
you’ll need a second pan of simmering hot water
Select a portion of your preferred noodles and lower them into the simmering water and stir briefly
add a handful of bean sprouts and water spinach to the noodles, mix all together briefly and remove to a serving bowl
add a spoon of the fried garlic, a pinch of pickled cabbage, a very generous pinch of chopped coriander and spring onions
lay the sliced pork on top
pour in a large portion of pork stock to almost fill the bowl

Serving suggestion:
Serve with a nice sprinkling of pepper on top to taste! Thais would generally add the following ingredients to fine tune the Kwaytiaw to their own taste. Try our (Pik Nam Paa) for those of us who like to pep it up a bit, be careful with this, (the Chilli Fish Sauce Recipe) because its red hot or try adding some Red Chilli Powder, or Crushed Toasted Peanuts, Chilli Vinegar Sauce, Pik Nam Som and not forgetting sugar to taste.
