Thai Pumpkin Custard Dessert

Hello folks, well she left me on my own to scoff this weeks delightful dinner time dessert!

Thai Pumpkin Custard Dessert, a delicious sweet Thai coconut custard filling for the noble but bland Pumpkin.

The trick with this recipe is two-fold, fresh Coconut milk and small Pumpkins oh and follow Khwanjais recipe to the letter until you get the hang of this one or (as she says) culinary disasters will abound!

The fact is this is not a quick and/or easy recipe but the rewards are worth every bit of effort you invest in this wonderful Pumpkin Dessert Recipe

Below is a basic, abbreviated version of the recipe together with this tiddly video trailer

Thai Pumpkin Dessert


Ingredients:
2 small pumpkins (one shown)
coconut milk fresh
duck & chicken egg
panadus leaves or 2 drops of essence
palm sugar
salt

 

Preparation:
hollow out the pumpkins leaving a shell about 1cm, rinse and allow to dry

Preparing the Custard:
beat all the eggs together with panadus eaves and hand crush them in the egg mix
add palm sugar and salt, continue stirring until the sugar has dissolved
add the coconut milk to double the capacity and continue to mix and crush
drain the resulting mix through a cheese cloth into a pouring jug

Cooking:
fill the pumpkins and place in a vegetable steamer for 20-30 minutes
can be microwaved
when fully cooked remove from heat source and allow 10-20 minutes to cool a bit before serving

Serving suggestions:

Pumpkin Custard Dessert is delicious hot as a lovely finisher to a banquet which might include the following recipes.  Chicken Red Curry,  Ginger Chicken Stir Fry, BBQ Spare Ribs, Son in Laws Eggs, Thai Spring Rolls, Tom Kha Gai Soup.  It is also delicious when eaten cold as a simple sweet pumpkin snack.
