Fried Fish Recipe Ingredients
fish of choice
chillies
garlic
fish sauce
sugar
salt
limes
chicken stock
oil
assorted veggies for garnish
Preparation:
clean and dry the fish and deep score
marinade in lime juice,salt and chicken stock
The Sauce
pound the chillies and garlic
add lime juice, chicken stock powder, fish sauce and sugar mix well together and do a taste test, adjust as required
Cooking:
heat deep oil to medium heat
insert the fish to fry, turning it over until golden brown on both sides, remove leave to drain dry
next throw chuck in bulb chopped garlic, fry until golden brown and remove to drain
Serving Suggestion:
Serve up the fish on a bed of Lettuce on a large plate with sliced Tomato and Cucumber , liberally sprinkle the fried garlic on top, add a sprig of coriander and serve with hot rice.
