Thai Egg Salad Recipe

As I say in the video, I’m not a big salad fan, but this is a salad worth adding to my list of favourite foods.

The fact is I could not stop eating it until it was finished, the flavours that were heightened by Khwanjai’s dressing have to be tried to be believed but be careful, as I mentioned it would be very easy to ruin this refreshing and fragrant salad with too much chilli.

Spicy Egg Salad Recipe
(Salad Kai)
How To Make Spicy Egg Salad

Ingredients:
3 Eggs (hard boiled)
Fresh Salad Lettuce
1 Carrot
1/2 Cucumber
2 Garlic cloves
3 Thai chillies
1 1/2 Limes
1 Tomato
1/2 Onion
2 Tbs Fish sauce
1 Tbs Sugar
1 ts Chicken stock powder (1/4 cube)

Vegetable Preparation:
Chop Garlic and Thai chillies
Chop Tomato into wedges
Slice Eggs wedges or slices
Slice Onion
Slice Cucumber and Carrot and cut slices into stick
Tear lettuce to fill a cup

The Dressing:
Squeeze the juice from the limes into a bowl and add the fish sauce, sugar and chicken stock powder, stir until dissolved.

The Salad:
Add Garlic and Chillies to the dressing, add tomatoes, onions, carrots, cucumber and toss gently
Now add the lettuce and mix again followed by the eggs toss a few more times
