Special Fried Rice

Special Fried Rice by name, and Special Fried rice by Nature and this IS A VERY Special Fried Rice indeed. For starters, well, actually for a main course even!  (bad joke) Ehem!  Khwanjais Special Fried Rice or as we call it in the family Pineapple Fried Rice to avoid confusion with Khwanjais version of the humble Egg Fried Rice which is what most mortals expect when they order Special Fried Rice in a restaurant or take-away. So what I’m saying here is that Special Fried Rice (Pineapple) goes one step beyond the norm and provides an ornate and colourful bounty for your guests that is not only delightful to gaze upon but tastes bloody marvellous to boot!! 15 Ingredients go into the making of this Special Fried Rice Recipe, but don’t be daunted by that because as she says her self its a quick and easy Thai stir fry, if you don’t count prep time – about 10 minutes.  The cooking time is only about five minutes choice is yours.

(Khao Phad Sap Pa Lot)


Special Fried Rice Ingredients:
Pineapple
Cooked Rice
Eggs
Mixed Bell Peppers
Cashew Nuts
Sweet Corn
Peas
Ham
Garlic
Seasoning Sauce
Oyster Sauce
Sugar
Salt
Chicken Stock
Oil

How To Make Special Fried Rice

Prepare Thus: Slice Pineapple and scoop out the insides saving some for frying Dice all the vegetables and ham finely as per special fried rice ingredients photo Get all other ingredients ready before frying


How to Cook:
Deep fry the cashew nuts until golden brown – allow to dry Next with hot wok add 2-3 Tbs oil followed by the chopped garlic, stir fry Next add ham and stir follow with the two eggs, lightly scramble before mixing with garlic and ham Now add rice and mix together well Add chicken stock, salt, sugar, seasoning sauce and oyster sauce, continue stirring until mixed well Add garden peas, sweet corn, bell peppers, pineapple and stir again mixing all well in before adding half the cashew nuts, stir once or twice and…… You just made Special Fried Rice

Best Way to Serve: Serving this dish is a simple affair, made to look lavish by the use of the hollowed out Pineapple for serving.  Simply spoon the Special Fried Rice into the shell and serve up on the table for a lovely centrepiece your guests will admire, you could also add a couple of jasmine flowers of an orchid for a final flourish. This dish can be quite happily eaten on it’s own and will also accompany virtually any other dish; Thai or otherwise.  It can also be made spicy “on the plate” by the addition of a very special ingredient and it’s not what you might think, our Silver members get to find out plus many more of Khwanjais top tips and suggestions for this recipe
