Raad Naa – Thai Noodles Soup Recipe

As you can see by watching me stuff my face with this delicious Raad NaaThai Noodle Soup, it’s very very tasty.

Bloomin’ versatile too, you can change practically everything in this recipe!  Traditionally it uses chicken or pork and Kale as the basic ingredients, but there are 16 (counting the water) ingredients in Khwanjai’s recipe, but it’s so easy to change things about. Leave the meat out and you get a vegetarian version, depending on your views on fish and oystr sauce.

The important things not to change are the sauces used and the method of cooking and Khwanjai shares more of her super top tips in the full video tutorial for achieving super tender meat and very crunchy veggies that are actually properly cooked, marvellous!

(Thai Noodle Soup)

The stuff you’ll need:
pork or chicken (optional)
sen yai noodles
baby sweet corns
oyster sauce
soy bean paste
tapioca starch
soy sauce
sugar
chicken stock powder
sliced carrot
kale, or broccoli etc
babby peas in pods
garlic
cooking oil
fish sauce
Water

Getting ready:
thinly slice the meat
cut Kale stems and leaves
carrots into sticks
chop the garlic
cut baby corns into slices
mix tapioca starch with water

Now we add some heat:
medium heat wok, pour 1 tbs oil into wok add rice noodles and stir whilst adding soy sauce and remove to a separate bowl
add 2-3 tbs oil to the wok again and add garlic, stir until golden brown
add meat stirring constantly
add 4 cups of water, bring back to the boil
add everything except starch and bring to boil
add tapioca starch mix to thicken
when you have the consistency you like serve it up on top of the pre-cooked noodles
Done!

Serving Tips:
