Fish Green Curry Recipe (short version)
Ingredients:
300 gr Fish
500 ml Coconut Milk
1 Bitter Melon
1 tbs Green Curry Paste
1 1/2 tbs Fish Sauce
1 ts Palm Sugar heaped
1 ts Chicken Stock powder (1/2 cube)
1 ts Salt
1 Cup Water
3 Thai Chillies
3 Kaffir Lime Leaves
Preparation:
Cut Fish so you have nice sized chunks with no bones
Slice Thai Chillies
Cut Bitter Melon into logs scoop ot the middle and slice
Wash and tear Kaffir Lime leaves
Cooking:
Turn on high heat pour half the Coconut milk into the wok bring to boil and stir occasionally until it cracks
Add Green Curry Paste and mix in for about a minute
Then add fish sauce, palm sugar and chicken stock powder mix in well
Add Kaffir lime leaves and chillies stir a few times
Add the Fish and Bitter melon and mix all together
When it boils add 1 cup of water and bring back to boil and leave to simmer for 3 minutes
Add the remaining Coconut milk
Bring back to boil, stir and then simmer again for 3-5 minutes and…..
Done!
