Chicken & Rice Soup Recipe
(Khao Tom Gai)
How To Make Rice and Chicken Soup
The Ingredients:
1 Cup Rice
200gm ground or minced chicken
1 scallion
1 sprig cilantro
1 sprig celery
1 clove garlic
2 tbs garlic (fried)
1 1/2 tbs seasoning sauce
1/2 ts Salt
1 ts Chicken Stock Powder
Prepare
Chop scallion, celery and cilantro quite finely
Chop garlic medium fine and fry 2/3rds until turning brown
Marinade chicken in seasoning sauce, pepper and chicken stock for minimum ten minutes
How to Cook
Bring to boil 3 cups water and add 1/2 tbs seasoning sauce, chicken stock and salt and 1 cup of pre-cooked rice re-boil and simmer for about 3 minutes
Spoon in the chicken to form small balls, bring to boil again and simmer for another 2 or 3 minutes
Check meat is cooked and taste test
Now add half the green vegetables, stir once and it’s done!
As you serve, sprinkle the remaining greens on top, some pepper and fried garlic
Serving Ideas:
Place a large bowl filled with the chicken and rice soup in the centre of the table and invite everyone to share, or simply serve into individual bowls. This one really is a meal in itself, having said that because it is mild, fresh and savoury flavoured, it goes great with something with a bit more bite.
