They’re all in this video!  You would not believe our dog is only a terrier judging by the sound of him!!

Yup!  Living in purgatory, whoops “paradise” has it’s drawbacks and trying to get five minutes of silence all at one time is a ridiculous quest, so as you’ll see I press on regardless with the odd peculiar face being pulled (not difficult with my face) and derogatory comment!

The BBQ Fish recipe on the other hand truly is a feature of paradise, a simple barbecue fish recipe.  It doesn’t come any simpler than this although there are a few nasty pitfalls to avoid and of course Khwanjai shares these with our members in the full tutorial.  You just throw a whole fish on the BBQ with 1 minute preparation and while its cooking you make the delightful sauce to go with it.

BBQ Fish Recipe

How to Barbecue Fish

Ingredients:
Serves 2-4 people
fish good size
chillies
garlic
sugar
fish sauce
chicken stock
limes
peanuts
salt
water
butter

Preparation:
stuff 2-3 lemon grass stalks in its mouth
toast and pound the peanuts

Cooking:
throw the whole fish onto the barbie coat with butter and salt turn over and repeat leave for about 3 minutes and turn back over for another 3 minutes stand your fish up on its belly for about 15 minutes lay it on its side for a further 5 minutes, turn and repeat and check to ensure fully cooked remove the charred skin from one side of the fish

Preparing The Sauce
pound the chillies and garlic
add lime juice, chicken stock, fish sauce and sugar mix well together
add some water and mix in the peanuts the resulting mix should not be too water nor too thick see video Spicy Sour Sweet Peanut Sauce Recipe

Serving Suggestion:
Serve up the fish on a bed of Lettuce on a large plate with sliced Tomato and Cucumber, and a small bowl of the delicious Spicy Sour Sweet Peanut Sauce and you can even serve with hot Jasmine rice but see how Jules eats it in the main video above with out rice.
